Dehydrating Cauliflower

Cauliflower is a wonderful veggie to dehydrate.  Some people prefer steaming first, but it can be dehydrated raw with no problem.  If you steam or cook your cauliflower, do so lightly. The less cooking, the more nutritious.  Actually, this applies to all the foods you cook.

This happens to be a green cauliflower… called “multi-colored”. It was something that came in our Bountiful Basket order last week.

How to Slice a Pineapple

The first time I looked at one of these things, I didn’t have a clue as to what to do.  I butchered the thing miserably.  Then I learned, but fresh pineapple is pretty expensive in Wyoming, so I didn’t think much about it.  However, recently we got one through Bountiful Harvest.  Before I knew what was happening, Mike decided to have some, so he butchered the thing… <sigh>

That’s when I realized that there are probably many people who don’t get fresh pineapples because they don’t know what to do with it.

You need a strong, sharp knife.  Something heavy-duty like a chef’s knife works well.

Using a Chef's Knife - Video

Here is a short demo on how to safely use a chef's knife.  I use mine for almost everything. It slices, dices, and minces with ease.  I use this all the time, except for those occasions when I use my mandolin slicer.

Overview of steps:
  • tuck fingers underneath
  • snug knife blade (not edge) next to knuckles
  • press down and slice forward
Do not chop!
