Dried Vegetable Equivalents

Here is a chart I got from the University of Florida Cooperative Extensive Service



It’s only a partial list, but it does cover some basics.  As I have time, I will continue to add to the list

 Fresh Produce = Dry Equivalents

  • 1 onion =
    • 1 ½ tbsp onion powder
  • 1 onion =
    • ¼ c dried minced onion
  • 1 green pepper =
    • ¼ c green pepper flakes
  • 1 cup carrots =
    • 4 tbsp powdered carrots
  • 1 cup carrots =
    • ½ c (heaped) dried carrots
  • 1 cup spinach = 
    • 2 – 3 tbsp powdered spinach
  • 1 med tomato =
    • 1 tbsp powdered tomato
  • ½ cup tomato puree =
    • 1 tbsp powdered tomato
  • 20 pounds tomatoes =
    • 18 oz dried sliced tomatoes
