A Short Table of Fresh to Dried Equivalents
This little table may help you get an idea of how much dry
produce will equal the fresh item. So
far, I have not found a comprehensive table showing equivalents from fresh to
dried. But at least this is a start.

Rehydrating Dehydrated Foods
Now that it’s dehydrated, what are you going to do with
it? Remember, dehydrated food is
concentrated, it doesn’t take as much as it would of the fresh ingredients.

Dried Vegetable Equivalents
Here is a chart I got from the University of Florida
Cooperative Extensive Service
Fresh Produce = Dry Equivalents
It’s only a partial list, but it does cover some
basics. As I have time, I will continue
to add to the list
- 1 onion =
- 1 ½ tbsp onion powder
- 1 onion =
- ¼ c dried minced onion
- 1 green pepper =
- ¼ c green pepper flakes
- 1 cup carrots =
- 4 tbsp powdered carrots
- 1 cup carrots =
- ½ c (heaped) dried carrots
- 1 cup spinach =
- 2 – 3 tbsp powdered spinach
- 1 med tomato =
- 1 tbsp powdered tomato
- ½ cup tomato puree =
- 1 tbsp powdered tomato
- 20 pounds tomatoes =
- 18 oz dried sliced tomatoes
